Spiced Eggplant Dip

Apart from steaming, charring eggplant over flame is a great way to cook it. You get that charred flavour while  the inside steams and softens.

Now, cook up an addictive Indian spiced mira pour of onions, garlic, ginger, green chillies and spices and toss that through the cooked eggplant and you will go in for 2nds, 3rds, 4ths ‘till there is nothing left. 

Ingredients:

  • 1 large eggplant

  • 1 large onion, peeled, thinly sliced

  • 3 cloves garlic, peeled, coarsely grated

  • 1 knob ginger, peeled, coarsely grated

  • 2 green chillies, finely sliced

  • 1-2 stalks curry leaves

  • 1 bunch coriander, cleaned, root & stem finely chopped, leaves chopped for later

Spice mix

  • 1 heaped tsp ground cumin (toasted cumin seeds, ground)

  • 1/2 tsp turmeric

  • 1 tsp kashmiri chilli powder

  • 1 tsp hot chilli powder

  • 1 tsp ground ginger

  • 1 tsp ground coriander (toasted coriander seeds, ground)
